Spicy Sichuan Dan Dan Noodles (麻辣担担面)

Ingredients

  • 8 oz (225g) fresh Chinese wheat noodles
  • 1/4 cup (60ml) sesame paste
  • 3 tbsp (45ml) soy sauce
  • 2 tbsp (30ml) Chinkiang vinegar
  • 2 tbsp (30ml) chili oil
  • 1 tbsp (15ml) Sichuan peppercorn oil
  • 2 cloves garlic, minced
  • 1/4 cup (60g) ground halal beef or lamb
  • 2 green onions, thinly sliced
  • 1/4 cup (60g) roasted peanuts, chopped

Instructions

  1. Boil the noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, mix together the sesame paste, soy sauce, Chinkiang vinegar, and chili oil to make the sauce.
  3. Heat the Sichuan peppercorn oil in a pan over medium heat. Add the minced garlic and ground halal beef or lamb. Cook until the meat is browned.
  4. Divide the cooked noodles into serving bowls. Pour the sauce over the noodles and top with the cooked meat mixture.
  5. Garnish with sliced green onions and chopped peanuts. Serve hot and enjoy!
