Ingredients
- 3 cups cooked white rice
- 2 tbsp vegetable oil
- 1/2 cup diced carrots
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 tbsp Sichuan peppercorns
- 2 tbsp soy sauce
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp white pepper
- 2 green onions, chopped
Instructions
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Add diced carrots, bell peppers, and onions. Stir-fry for 2-3 minutes until vegetables are slightly tender.
- Push the vegetables to the side of the wok and add minced garlic and Sichuan peppercorns. Stir-fry for 1 minute to release the fragrance.
- Add the cooked white rice to the wok. Stir-fry and toss the rice with the vegetables.
- Drizzle soy sauce over the rice and sprinkle with sugar, salt, and white pepper. Stir-fry for another 2-3 minutes until the rice is heated through and well combined with the seasonings.
- Add chopped green onions and toss everything together. Remove from heat.
- Transfer the spicy Sichuan style fried rice to a serving dish and serve hot.
