Spicy Sichuan Style Fried Rice (四川辣炒饭)

Ingredients

  • 3 cups cooked white rice
  • 2 tbsp vegetable oil
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tbsp Sichuan peppercorns
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 2 green onions, chopped

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium-high heat.
  2. Add diced carrots, bell peppers, and onions. Stir-fry for 2-3 minutes until vegetables are slightly tender.
  3. Push the vegetables to the side of the wok and add minced garlic and Sichuan peppercorns. Stir-fry for 1 minute to release the fragrance.
  4. Add the cooked white rice to the wok. Stir-fry and toss the rice with the vegetables.
  5. Drizzle soy sauce over the rice and sprinkle with sugar, salt, and white pepper. Stir-fry for another 2-3 minutes until the rice is heated through and well combined with the seasonings.
  6. Add chopped green onions and toss everything together. Remove from heat.
  7. Transfer the spicy Sichuan style fried rice to a serving dish and serve hot.
