Spicy Squid (sambal Sotong)
Spicy Squid (Sambal Sotong) is a popular dish in Peranakan cuisine, known for its bold and vibrant flavors.
Ingredients
- 500g squid, cleaned and cut into rings
- 3 tablespoons sambal paste
- 2 tablespoons tamarind juice
- 1 tablespoon sugar
- 3 cloves garlic, minced
- 1 onion, sliced
- 2 red chilies, sliced
- 1 teaspoon belacan (shrimp paste)
- 2 tablespoons cooking oil
- Salt to taste
Instructions
- Heat the cooking oil in a pan over medium heat.
- Add the minced garlic, sliced onion, and red chilies. Sauté until fragrant.
- Add the sambal paste and belacan, and continue to cook for 2-3 minutes.
- Add the squid rings, tamarind juice, sugar, and salt. Stir well to coat the squid with the sambal mixture.
- Cook for 5-7 minutes until the squid is cooked through.
- Once cooked, remove from heat and serve hot.
