Spicy Stew (st. Kitts Goat Water)

Ingredients

  • 2 lbs goat meat, cut into chunks
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 sprigs thyme
  • 2 bay leaves
  • 1 Scotch bonnet pepper, whole
  • 1 tsp allspice
  • 1 tsp black pepper
  • 1 tsp paprika
  • 6 cups water
  • Salt to taste

Instructions

  1. Season the goat meat with salt, black pepper, and paprika.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the seasoned goat meat and brown on all sides.
  4. Stir in the onion, garlic, and tomatoes, and cook until the onions are soft.
  5. Tie the thyme and bay leaves together with kitchen twine and add to the pot.
  6. Add the whole Scotch bonnet pepper, allspice, and water to the pot.
  7. Bring the stew to a boil, then reduce the heat and simmer for 2 hours, or until the goat meat is tender.
  8. Adjust the seasoning with salt and pepper, if needed.
  9. Discard the thyme, bay leaves, and Scotch bonnet pepper before serving.
