Ingredients
- 2 lbs goat meat, cut into chunks
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 sprigs thyme
- 2 bay leaves
- 1 Scotch bonnet pepper, whole
- 1 tsp allspice
- 1 tsp black pepper
- 1 tsp paprika
- 6 cups water
- Salt to taste
Instructions
- Season the goat meat with salt, black pepper, and paprika.
- Heat the vegetable oil in a large pot over medium heat.
- Add the seasoned goat meat and brown on all sides.
- Stir in the onion, garlic, and tomatoes, and cook until the onions are soft.
- Tie the thyme and bay leaves together with kitchen twine and add to the pot.
- Add the whole Scotch bonnet pepper, allspice, and water to the pot.
- Bring the stew to a boil, then reduce the heat and simmer for 2 hours, or until the goat meat is tender.
- Adjust the seasoning with salt and pepper, if needed.
- Discard the thyme, bay leaves, and Scotch bonnet pepper before serving.
