Spicy Stinky Beans (sambal Petai)
Spicy Stinky Beans, also known as Sambal Petai, is a popular dish in Peranakan cuisine. This pungent and flavorful dish is made with stink beans, also known as petai, and a spicy sambal sauce.
Ingredients
- 250g stink beans (petai)
- 200g prawns, peeled and deveined
- 5 shallots, finely sliced
- 3 cloves garlic, minced
- 2 red chillies, sliced
- 2 tablespoons tamarind paste
- 1 tablespoon sugar
- 1 teaspoon belacan (shrimp paste)
- 3 tablespoons cooking oil
- Salt to taste
Instructions
- Blanch the stink beans in boiling water for 2 minutes, then drain and set aside.
- Heat the cooking oil in a wok over medium heat. Add the shallots, garlic, and belacan, and stir-fry until fragrant.
- Add the prawns and stir-fry until they turn pink and opaque.
- Add the stink beans and red chillies, and stir-fry for another 2-3 minutes.
- In a small bowl, mix the tamarind paste, sugar, and a pinch of salt with 2 tablespoons of water. Pour this mixture into the wok and stir well.
- Cook for another 5 minutes, stirring occasionally, until the sauce thickens and coats the ingredients.
- Remove from heat and serve hot with steamed rice.
