Spicy Szechuan Beef Stir-Fry (四川辣牛肉炒)

Ingredients

  • 1 lb flank steak, thinly sliced
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 2-3 green onions, chopped
  • 1 red bell pepper, sliced
  • 1/4 cup soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 1 tbsp Szechuan peppercorns
  • 2 tbsp Szechuan chili bean paste

Instructions

  1. Heat 1 tbsp of vegetable oil in a wok over high heat. Add the sliced beef and stir-fry for 2-3 minutes until browned. Remove the beef from the wok and set aside.
  2. Heat the remaining 1 tbsp of vegetable oil in the wok. Add the garlic, ginger, and green onions. Stir-fry for 1-2 minutes until fragrant.
  3. Add the red bell pepper to the wok and stir-fry for another 2 minutes.
  4. Return the beef to the wok. Add soy sauce, Shaoxing wine, sugar, Szechuan peppercorns, and Szechuan chili bean paste. Stir-fry for an additional 2-3 minutes until everything is well combined and heated through.
  5. Transfer the spicy Szechuan beef stir-fry to a serving dish and garnish with additional green onions if desired.
