Spicy Szechuan Paneer

Ingredients

  • 250g paneer, cubed
  • 2 tbsp cornflour
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 3-4 dried red chilies
  • 4-5 garlic cloves, minced
  • 1-inch ginger, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tbsp red chili sauce
  • 1 tbsp tomato ketchup
  • 1 tsp Szechuan peppercorns
  • Salt to taste
  • Oil for cooking

Instructions

  1. In a bowl, coat the paneer cubes with cornflour and shallow fry until golden brown. Set aside.
  2. Heat oil in a pan and sauté dried red chilies, minced garlic, and chopped ginger until fragrant.
  3. Add sliced onions and bell peppers, and stir-fry until they are slightly tender.
  4. Next, add soy sauce, vinegar, red chili sauce, tomato ketchup, Szechuan peppercorns, and salt. Mix well.
  5. Add the fried paneer cubes to the pan and toss until the paneer is coated with the sauce.
  6. Garnish with spring onions and serve hot.
