Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced

- 3 tablespoons rice vinegar
- 2 tablespoons sugar
- 1 teaspoon Sichuan peppercorns
- 2 green onions, chopped

Instructions
- Heat the vegetable oil in a wok or large skillet over high heat.
- Add the garlic and ginger, and stir-fry for 30 seconds.
- Add the shrimp and stir-fry until they turn pink, about 2-3 minutes.
- Reduce the heat to medium, then add the soy sauce, rice vinegar, sugar, and Sichuan peppercorns. Stir well to combine.
- Cook for another 2-3 minutes until the sauce thickens slightly.
- Stir in the green onions and red chili (if using), and cook for an additional minute.
- Remove from heat and serve hot.
