Ingredients
- 1 block of firm tofu, cubed
- 2 cups mixed vegetables (such as bell peppers, broccoli, and snap peas)
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 red chili, sliced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Add the cubed tofu and stir-fry for 5-7 minutes until golden brown. Remove from the skillet and set aside.
- Heat the remaining tablespoon of vegetable oil in the same skillet.
- Add the minced garlic and sliced red chili, and stir-fry for 1-2 minutes until fragrant.
- Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
- Return the tofu to the skillet and add soy sauce, rice vinegar, sugar, salt, and pepper. Stir-fry for another 2-3 minutes until everything is well combined and heated through.
- Transfer to a serving dish and serve hot.
