Spicy Tofu Explosion (辣豆腐爆炒)

Ingredients

  • 1 block of firm tofu, cubed
  • 2 tbsp vegetable oil
  • 3-4 dried red chili peppers, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, julienned
  • 2 green onions, chopped
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 cup water

Instructions

  1. Heat the vegetable oil in a wok over high heat.
  2. Add the chopped dried red chili peppers and stir-fry for 30 seconds.
  3. Add the minced garlic, julienned ginger, and chopped green onions. Stir-fry for another 30 seconds.
  4. Add the cubed tofu and stir gently to combine with the aromatics.
  5. Pour in the soy sauce, sugar, salt, and water. Stir gently to mix everything together.
  6. Cover the wok and let the tofu cook for 5 minutes, allowing the flavors to meld together.
  7. Uncover the wok and continue to cook for another 3-5 minutes, or until the sauce has thickened and coated the tofu.
  8. Transfer the spicy tofu explosion to a serving dish and garnish with additional chopped green onions, if desired.
