Spicy Tofu Soup (麻辣豆腐汤)

Ingredients

  • 1 block of firm tofu, cubed
  • 2 cups of vegetable broth
  • 1 cup of sliced mushrooms
  • 1/2 cup of sliced bamboo shoots
  • 1/4 cup of soy sauce
  • 2 tablespoons of Chinese black vinegar
  • 2 tablespoons of chili oil
  • 1 tablespoon of Sichuan peppercorns
  • 2 green onions, sliced
  • 2 cloves of garlic, minced
  • 1 teaspoon of sugar
  • Salt to taste

Instructions

  1. In a pot, bring the vegetable broth to a simmer.
  2. Add the tofu, mushrooms, bamboo shoots, soy sauce, Chinese black vinegar, chili oil, Sichuan peppercorns, garlic, and sugar to the pot.
  3. Simmer for 15 minutes, or until the tofu and vegetables are tender.
  4. Season with salt to taste.
  5. Garnish with sliced green onions before serving.
