Spicy Tomato and Chickpea Stew (Harira Bil-Tomato)

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (14 oz) chickpeas, drained and rinsed
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • Lemon wedges for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Pour in the diced tomatoes and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  4. Add the chickpeas to the pot and let the stew simmer for an additional 10 minutes.
  5. Season with salt and pepper to taste. Stir in the chopped cilantro just before serving.
  6. Serve the Harira Bil-Tomato hot with lemon wedges on the side.
