Spicy Tomato and Chickpea Stew (Harira Bil-Tomato)
Harira Bil-Tomato is a popular Libyan dish, a spicy tomato and chickpea stew that is both hearty and flavorful. This dish is perfect for a cozy night in or for entertaining guests with its rich and aromatic flavors.
Ingredients
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (14 oz) chickpeas, drained and rinsed
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- Lemon wedges for serving
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Pour in the diced tomatoes and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Add the chickpeas to the pot and let the stew simmer for an additional 10 minutes.
- Season with salt and pepper to taste. Stir in the chopped cilantro just before serving.
- Serve the Harira Bil-Tomato hot with lemon wedges on the side.
