Spicy Tomato and Lentil Soup (Ash-e-Reshteh)

Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 4 oz reshteh (Persian noodles) or linguine, broken into small pieces
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the lentils, diced tomatoes, vegetable broth, cumin, paprika, and cayenne pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Add the reshteh or broken linguine to the pot and cook for an additional 10 minutes, or until the noodles are tender.
  4. Season with salt and pepper to taste.
  5. Serve hot and enjoy!
