Spicy Tomato and Lentil Soup (Ash-e-Reshteh)
Ash-e-Reshteh is a traditional Kurdish soup that is hearty, flavorful, and perfect for a cold day. This Spicy Tomato and Lentil Soup is packed with protein and fiber, making it a nutritious and satisfying meal.
Ingredients
- 1 cup lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 4 oz reshteh (Persian noodles) or linguine, broken into small pieces
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the lentils, diced tomatoes, vegetable broth, cumin, paprika, and cayenne pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the reshteh or broken linguine to the pot and cook for an additional 10 minutes, or until the noodles are tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
