Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, sliced
  • 5 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, diced
  • 3 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 tablespoon sugar
  • Salt to taste
  • Water
  • Cooking oil

Instructions

  1. Heat some cooking oil in a large pan over medium heat.
  2. Add the sliced onions and sauté until they are soft and translucent.
  3. Stir in the minced garlic and grated ginger, and cook until fragrant.
  4. Add the chicken pieces to the pan and brown them on all sides.
  5. Once the chicken is browned, add the diced tomatoes, tomato paste, chili powder, turmeric powder, coriander powder, cumin powder, sugar, and salt. Mix well to coat the chicken with the spices.
  6. Pour in enough water to cover the chicken, then bring the mixture to a simmer.
  7. Cover the pan and let the chicken cook for about 30 minutes, or until it is tender and the sauce has thickened.
  8. Adjust the seasoning if needed, then serve the Spicy Tomato Chicken hot with steamed rice.
