Spicy Tomato Sauce (somali Suugo)

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1 can (14 oz) crushed tomatoes
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large saucepan, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and sauté for another minute.
  4. Stir in the cumin, coriander, cayenne pepper, paprika, and turmeric, and cook for 1-2 minutes until fragrant.
  5. Pour in the crushed tomatoes and season with salt and black pepper.
  6. Simmer the sauce for 20-25 minutes, stirring occasionally, until it thickens.
  7. Adjust seasoning to taste and remove from heat.
