Spicy Tuna Cachupa
Spicy Tuna Cachupa is a traditional Cape Verdean dish that combines the flavors of tuna, vegetables, and spices. This hearty and spicy stew is perfect for a comforting meal.
Ingredients
- 2 cans of tuna, drained
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 cup of corn kernels
- 1 cup of chopped kale
- 1 cup of chopped sweet potatoes
- 2 cups of chicken or vegetable broth
- 1 tablespoon of paprika
- 1 teaspoon of cayenne pepper
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, garlic, and bell pepper. Sauté until the vegetables are softened.
- Stir in the tomatoes, sweet potatoes, and corn. Cook for 5 minutes.
- Add the kale, paprika, cayenne pepper, salt, and pepper. Cook for another 2 minutes.
- Pour in the broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes.
- Add the drained tuna to the pot and cook for an additional 10 minutes.
- Adjust the seasoning if necessary and serve hot.
