Spicy Vegetable Calzone (chakalaka Calzone)
This Spicy Vegetable Calzone, also known as Chakalaka Calzone, is a delicious and flavorful dish from Zimbabwean cuisine. It's a perfect combination of spicy chakalaka and savory calzone, making it a unique and satisfying meal.
Ingredients
- 2 cups all-purpose flour
- 1 packet active dry yeast
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 cup warm water
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 carrot, grated
- 1 can (14 oz) baked beans in tomato sauce
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 1 cup grated cheddar cheese
Instructions
- In a bowl, combine the flour, yeast, sugar, and salt. Gradually add the warm water and olive oil, and knead the dough until smooth. Cover and let it rise for 1 hour.
- In a pan, sauté the onion and garlic until fragrant. Add the bell peppers, carrot, baked beans, curry powder, paprika, cayenne pepper, salt, and pepper. Cook for 5-7 minutes.
- Preheat the oven to 400°F (200°C).
- Divide the dough into 4 equal portions. Roll out each portion into a circle on a floured surface.
- Spoon the vegetable mixture onto one half of each dough circle, leaving a border. Sprinkle with grated cheddar cheese.
- Fold the other half of the dough over the filling and press the edges to seal. Use a fork to crimp the edges.
- Place the calzones on a baking sheet and bake for 15-20 minutes, or until golden brown.
- Serve hot and enjoy!
