Spicy Vegetable Calzone (chakalaka Calzone)

Ingredients

  • 2 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup warm water
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 carrot, grated
  • 1 can (14 oz) baked beans in tomato sauce
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 cup grated cheddar cheese

Instructions

  1. In a bowl, combine the flour, yeast, sugar, and salt. Gradually add the warm water and olive oil, and knead the dough until smooth. Cover and let it rise for 1 hour.
  2. In a pan, sauté the onion and garlic until fragrant. Add the bell peppers, carrot, baked beans, curry powder, paprika, cayenne pepper, salt, and pepper. Cook for 5-7 minutes.
  3. Preheat the oven to 400°F (200°C).
  4. Divide the dough into 4 equal portions. Roll out each portion into a circle on a floured surface.
  5. Spoon the vegetable mixture onto one half of each dough circle, leaving a border. Sprinkle with grated cheddar cheese.
  6. Fold the other half of the dough over the filling and press the edges to seal. Use a fork to crimp the edges.
  7. Place the calzones on a baking sheet and bake for 15-20 minutes, or until golden brown.
  8. Serve hot and enjoy!
