Spicy Vegetable Chili (chakalaka Chili)
This Spicy Vegetable Chili, also known as Chakalaka Chili, is a flavorful and hearty dish from Zimbabwean cuisine. Packed with a variety of vegetables and spices, this chili is perfect for a cozy night in or for entertaining guests.
Ingredients
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 carrots, diced
- 1 zucchini, diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 2 tablespoons tomato paste
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced bell peppers, carrots, and zucchini to the pot. Cook for 5-7 minutes, or until the vegetables start to soften.
- Stir in the drained and rinsed kidney beans, black beans, diced tomatoes, and tomato paste. Add the chili powder, paprika, cumin, salt, and pepper. Mix well to combine.
- Reduce the heat to low and let the chili simmer for 25-30 minutes, stirring occasionally.
- Once the vegetables are tender and the flavors have melded together, taste the chili and adjust the seasoning if needed.
- Serve the spicy vegetable chili hot, garnished with your choice of toppings such as chopped cilantro, avocado slices, or a dollop of sour cream.
