Spicy Vegetable Chili (chakalaka Chili)

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced bell peppers, carrots, and zucchini to the pot. Cook for 5-7 minutes, or until the vegetables start to soften.
  3. Stir in the drained and rinsed kidney beans, black beans, diced tomatoes, and tomato paste. Add the chili powder, paprika, cumin, salt, and pepper. Mix well to combine.
  4. Reduce the heat to low and let the chili simmer for 25-30 minutes, stirring occasionally.
  5. Once the vegetables are tender and the flavors have melded together, taste the chili and adjust the seasoning if needed.
  6. Serve the spicy vegetable chili hot, garnished with your choice of toppings such as chopped cilantro, avocado slices, or a dollop of sour cream.
