Spicy Vegetable Stew (chakalaka Casserole)

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 carrots, grated
  • 1 can (14 oz) baked beans in tomato sauce
  • 1 can (14 oz) chopped tomatoes
  • 2 teaspoons curry powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili flakes
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Add the diced bell peppers and grated carrots, and cook for 5 minutes.
  4. Pour in the baked beans, chopped tomatoes, curry powder, paprika, cumin, and chili flakes. Stir to combine.
  5. Season with salt and pepper, then reduce the heat and let the stew simmer for 20-25 minutes, stirring occasionally.
  6. Once the vegetables are tender and the flavors have melded, remove from heat and serve hot.
