Spicy Vegetable Stew (chakalaka Casserole)

Ingredients
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 carrots, grated
- 1 can (14 oz) baked beans in tomato sauce
- 1 can (14 oz) chopped tomatoes
- 2 teaspoons curry powder
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon chili flakes
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the diced bell peppers and grated carrots, and cook for 5 minutes.
- Pour in the baked beans, chopped tomatoes, curry powder, paprika, cumin, and chili flakes. Stir to combine.
- Season with salt and pepper, then reduce the heat and let the stew simmer for 20-25 minutes, stirring occasionally.
- Once the vegetables are tender and the flavors have melded, remove from heat and serve hot.
