辣炒鸡 (Spicy Wok-Fried Chicken) is a classic dish from Hubei Cuisine known for its bold flavors and spicy kick. This dish is perfect for those who love a bit of heat in their meals.
Ingredients
- 500g boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 3-4 dried red chilies, chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, julienned
- 2 green onions, sliced
- 1 tbsp soy sauce
- 1 tbsp Shaoxing wine (or dry sherry)
- 1 tsp sugar
- Salt to taste
Instructions
- Heat the vegetable oil in a wok over high heat.
- Add the dried red chilies, garlic, and ginger. Stir-fry for 30 seconds until fragrant.
- Add the chicken pieces and stir-fry for 3-4 minutes until they are browned and cooked through.
- Add the soy sauce, Shaoxing wine, sugar, and salt. Stir-fry for another 2 minutes.
- Add the green onions and stir-fry for an additional 30 seconds.
- Transfer to a serving dish and serve hot with steamed rice.
