Spicy Wok-Fried Chicken (辣炒鸡)

Ingredients

  • 500g boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 3-4 dried red chilies, chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, julienned
  • 2 green onions, sliced
  • 1 tbsp soy sauce
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 1 tsp sugar
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a wok over high heat.
  2. Add the dried red chilies, garlic, and ginger. Stir-fry for 30 seconds until fragrant.
  3. Add the chicken pieces and stir-fry for 3-4 minutes until they are browned and cooked through.
  4. Add the soy sauce, Shaoxing wine, sugar, and salt. Stir-fry for another 2 minutes.
  5. Add the green onions and stir-fry for an additional 30 seconds.
  6. Transfer to a serving dish and serve hot with steamed rice.
