Ingredients
- 500g pork kidneys, cleaned and sliced
- 3 tbsp vegetable oil
- 2 tbsp Sichuan peppercorns
- 4-5 dried red chilies, chopped
- 3 cloves garlic, minced
- 1 inch ginger, julienned
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- Salt to taste
Instructions
- Heat vegetable oil in a wok over high heat.
- Add Sichuan peppercorns and dried red chilies, stir-fry until fragrant.
- Add garlic, ginger, and green onions, continue to stir-fry for 1-2 minutes.
- Add pork kidneys, soy sauce, Shaoxing wine, sugar, and salt. Stir-fry for 5-6 minutes until the pork kidneys are cooked through.
- Transfer to a serving plate and garnish with additional green onions if desired.
