Ingredients

  • 500g pork kidneys, cleaned and sliced
  • 3 tbsp vegetable oil
  • 2 tbsp Sichuan peppercorns
  • 4-5 dried red chilies, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, julienned
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • Salt to taste

Instructions

  1. Heat vegetable oil in a wok over high heat.
  2. Add Sichuan peppercorns and dried red chilies, stir-fry until fragrant.
  3. Add garlic, ginger, and green onions, continue to stir-fry for 1-2 minutes.
  4. Add pork kidneys, soy sauce, Shaoxing wine, sugar, and salt. Stir-fry for 5-6 minutes until the pork kidneys are cooked through.
  5. Transfer to a serving plate and garnish with additional green onions if desired.
