辣炒大虾 (Spicy Wok-Fried Prawns) is a classic dish from Hubei Cuisine known for its bold flavors and spicy kick. This dish is perfect for seafood lovers who enjoy a bit of heat in their meals.
Ingredients
- 500g large prawns, peeled and deveined
- 3 tbsp vegetable oil
- 3-4 cloves garlic, minced
- 2-3 red chilies, sliced
- 1 inch ginger, julienned
- 2 green onions, chopped
- 1 tbsp Shaoxing wine
- 1 tbsp soy sauce
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp Sichuan peppercorns
Instructions
- Heat the vegetable oil in a wok over high heat.
- Add the garlic, red chilies, and ginger. Stir-fry for 30 seconds until fragrant.
- Add the prawns and stir-fry for 2-3 minutes until they turn pink.
- Pour in the Shaoxing wine, soy sauce, sugar, salt, and Sichuan peppercorns. Stir-fry for another 2 minutes.
- Add the green onions and stir-fry for an additional 1 minute.
- Transfer to a serving dish and serve hot.
