Spicy Wok-Fried Prawns (辣炒大虾)

Ingredients

  • 500g large prawns, peeled and deveined
  • 3 tbsp vegetable oil
  • 3-4 cloves garlic, minced
  • 2-3 red chilies, sliced
  • 1 inch ginger, julienned
  • 2 green onions, chopped
  • 1 tbsp Shaoxing wine
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp Sichuan peppercorns

Instructions

  1. Heat the vegetable oil in a wok over high heat.
  2. Add the garlic, red chilies, and ginger. Stir-fry for 30 seconds until fragrant.
  3. Add the prawns and stir-fry for 2-3 minutes until they turn pink.
  4. Pour in the Shaoxing wine, soy sauce, sugar, salt, and Sichuan peppercorns. Stir-fry for another 2 minutes.
  5. Add the green onions and stir-fry for an additional 1 minute.
  6. Transfer to a serving dish and serve hot.
