Spicy Wok-Fried Shrimp (辣炒虾)

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2-3 red chilies, sliced
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 green onions, chopped

Instructions

  1. Heat the wok over high heat and add the vegetable oil.
  2. Stir-fry the garlic, ginger, and red chilies until fragrant.
  3. Add the shrimp and stir-fry for 2-3 minutes until they turn pink.
  4. Pour in the Shaoxing wine, soy sauce, sugar, salt, and white pepper. Stir-fry for another minute.
  5. Add the green onions and stir-fry for a final 30 seconds.
  6. Transfer to a serving dish and serve hot.
