辣炒鱿鱼 (Spicy Wok-Fried Squid) is a classic dish from Hubei Cuisine known for its bold flavors and tender squid. This dish is perfect for spice lovers and seafood enthusiasts.
Ingredients
- 500g fresh squid, cleaned and sliced
- 3 tbsp vegetable oil
- 3-4 cloves garlic, minced
- 2-3 red chilies, sliced
- 1 tsp Sichuan peppercorns
- 2 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- Salt to taste
- Chopped scallions for garnish
Instructions
- Heat the vegetable oil in a wok over high heat.
- Add the garlic, red chilies, and Sichuan peppercorns. Stir-fry for 30 seconds until fragrant.
- Add the squid and stir-fry for 2-3 minutes until it turns opaque.
- Pour in the soy sauce, Shaoxing wine, sugar, and salt. Stir-fry for another 2-3 minutes.
- Garnish with chopped scallions and serve hot.
