Ingredients

  • 2 cups plain yogurt
  • 4 tbsp gram flour (besan)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 2-3 dried red chilies
  • 1 inch ginger, grated
  • 2-3 cloves garlic, minced
  • 1/2 tsp asafoetida (hing)
  • 2 cups water
  • Salt to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro leaves for garnish

Instructions

  1. In a bowl, whisk together the yogurt, gram flour, turmeric powder, red chili powder, and salt. Gradually add water to make a smooth mixture.
  2. Heat oil in a deep pan over medium heat. Add cumin seeds, dried red chilies, grated ginger, and minced garlic. Sauté until fragrant.
  3. Add the yogurt mixture to the pan and stir continuously to prevent lumps from forming. Cook for 15-20 minutes until the curry thickens.
  4. In a small pan, heat a little oil and add the asafoetida. Pour this tempering over the prepared curry.
  5. Garnish with fresh cilantro leaves and serve hot with steamed rice or roti.
