Spinach and Beef Stir-Fry (Sauté d'épinards et bœuf)

Ingredients
- 1 lb beef, thinly sliced
- 2 tbsp vegetable oil
- 1 onion, sliced
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 lb fresh spinach, washed and chopped
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the sliced beef and cook until browned, about 3-4 minutes.
- Push the beef to one side of the skillet and add the onion, garlic, and ginger. Sauté for 2-3 minutes until fragrant.
- Stir in the paprika and cayenne pepper, then add the chopped spinach. Cook for another 2-3 minutes until the spinach is wilted.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
