Spinach and Beef Stir-Fry (Sauté d'épinards et bœuf)

Ingredients

  • 1 lb beef, thinly sliced
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 lb fresh spinach, washed and chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the sliced beef and cook until browned, about 3-4 minutes.
  3. Push the beef to one side of the skillet and add the onion, garlic, and ginger. Sauté for 2-3 minutes until fragrant.
  4. Stir in the paprika and cayenne pepper, then add the chopped spinach. Cook for another 2-3 minutes until the spinach is wilted.
  5. Season with salt and pepper to taste.
  6. Remove from heat and serve hot.
