Spinach And Cottage Cheese Curry (punjabi Palak Paneer)

Ingredients

  • 2 bunches of fresh spinach, washed and chopped
  • 200g cottage cheese (paneer), cubed
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 cup heavy cream
  • Salt to taste
  • 2 tablespoons ghee (clarified butter) or oil

Instructions

  1. Heat ghee in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add minced garlic, grated ginger, and green chilies. Sauté for a few minutes.
  3. Stir in the tomato puree and cook until the oil separates from the masala.
  4. Add turmeric, coriander, red chili powder, and garam masala. Cook for a minute.
  5. Add the chopped spinach and cook until wilted.
  6. Transfer the mixture to a blender and blend into a smooth puree.
  7. Return the puree to the pan, add the cubed cottage cheese, and simmer for 5 minutes.
  8. Stir in the heavy cream and salt. Cook for an additional 2-3 minutes.
  9. Spinach and Cottage Cheese Curry (Punjabi Palak Paneer) is ready to be served hot with naan or rice.
