Ingredients
- 2 bunches of fresh spinach, washed and chopped
- 200g cottage cheese (paneer), cubed
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 4 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 1/2 cup heavy cream
- Salt to taste
- 2 tablespoons ghee (clarified butter) or oil
Instructions
- Heat ghee in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and green chilies. Sauté for a few minutes.
- Stir in the tomato puree and cook until the oil separates from the masala.
- Add turmeric, coriander, red chili powder, and garam masala. Cook for a minute.
- Add the chopped spinach and cook until wilted.
- Transfer the mixture to a blender and blend into a smooth puree.
- Return the puree to the pan, add the cubed cottage cheese, and simmer for 5 minutes.
- Stir in the heavy cream and salt. Cook for an additional 2-3 minutes.
- Spinach and Cottage Cheese Curry (Punjabi Palak Paneer) is ready to be served hot with naan or rice.
