Spinach and Cottage Cheese (Palak Paneer) is a popular Jain Cuisine dish that is both nutritious and delicious. This recipe combines the goodness of spinach with the creamy texture of cottage cheese, making it a perfect main course for lunch or dinner.
Ingredients
- 2 cups spinach, washed and chopped
- 200g cottage cheese (paneer), cubed
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 green chili, chopped
- 1 teaspoon ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- Salt to taste
- 2 tablespoons ghee (clarified butter) or oil
- Water as needed
Instructions
- Heat ghee or oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add grated ginger and green chili, and sauté for a minute.
- Now, add pureed tomatoes and cook until the oil separates from the masala.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for 2-3 minutes.
- Add chopped spinach and cook until it wilts and becomes soft.
- Add cubed cottage cheese (paneer) and garam masala. Mix gently and cook for 2-3 minutes.
- If needed, add water to adjust the consistency of the gravy. Simmer for a few minutes until the flavors are well combined.
- Garnish with a dollop of ghee and serve hot with roti or rice.
