Spinach And Cottage Cheese (palak Paneer)

Ingredients

  • 2 cups spinach, washed and chopped
  • 200g cottage cheese (paneer), cubed
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 green chili, chopped
  • 1 teaspoon ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • 2 tablespoons ghee (clarified butter) or oil
  • Water as needed

Instructions

  1. Heat ghee or oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add grated ginger and green chili, and sauté for a minute.
  3. Now, add pureed tomatoes and cook until the oil separates from the masala.
  4. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for 2-3 minutes.
  5. Add chopped spinach and cook until it wilts and becomes soft.
  6. Add cubed cottage cheese (paneer) and garam masala. Mix gently and cook for 2-3 minutes.
  7. If needed, add water to adjust the consistency of the gravy. Simmer for a few minutes until the flavors are well combined.
  8. Garnish with a dollop of ghee and serve hot with roti or rice.
