Spinach and Feta Borek (Börek)
Börek is a traditional savory pastry dish in Gagauz cuisine, typically filled with a mixture of spinach and feta cheese. This delicious dish is perfect for breakfast, brunch, or as a side dish for any meal.
Ingredients
- 1 package of phyllo dough
- 1 pound fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup chopped fresh parsley
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the chopped spinach, feta cheese, parsley, olive oil, salt, and pepper.
- Unroll the phyllo dough and cut it into 3-inch wide strips.
- Place a spoonful of the spinach and feta mixture at one end of each strip of phyllo dough.
- Roll the phyllo dough around the filling to form a cigar shape.
- Place the börek on a baking sheet and brush the tops with a little more olive oil.
- Bake in the preheated oven for 35-40 minutes, or until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
