Spinach and Feta Borek (Börek)

Ingredients

  • 1 package of phyllo dough
  • 1 pound fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped fresh parsley
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the chopped spinach, feta cheese, parsley, olive oil, salt, and pepper.
  3. Unroll the phyllo dough and cut it into 3-inch wide strips.
  4. Place a spoonful of the spinach and feta mixture at one end of each strip of phyllo dough.
  5. Roll the phyllo dough around the filling to form a cigar shape.
  6. Place the börek on a baking sheet and brush the tops with a little more olive oil.
  7. Bake in the preheated oven for 35-40 minutes, or until golden brown and crispy.
  8. Remove from the oven and let cool for a few minutes before serving.
