Spinach and Peanut Curry (Igitoke n'Inyama ye Arasho)

Ingredients
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 cup smooth peanut butter
- 4 cups fresh spinach, chopped
- 1 cup vegetable broth
- Salt to taste
- Chopped peanuts for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until softened.
- Add the minced garlic, grated ginger, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 2 minutes, stirring constantly.
- Stir in the peanut butter until well combined with the spices.
- Add the chopped spinach and vegetable broth. Stir well and simmer for 15-20 minutes, or until the spinach is tender.
- Season with salt to taste.
- Serve the curry hot, garnished with chopped peanuts, and accompanied by steamed rice or flatbread.
