Spinach and Peanut Curry (Igitoke n'Inyama ye Arasho)

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 cup smooth peanut butter
  • 4 cups fresh spinach, chopped
  • 1 cup vegetable broth
  • Salt to taste
  • Chopped peanuts for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until softened.
  2. Add the minced garlic, grated ginger, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 2 minutes, stirring constantly.
  3. Stir in the peanut butter until well combined with the spices.
  4. Add the chopped spinach and vegetable broth. Stir well and simmer for 15-20 minutes, or until the spinach is tender.
  5. Season with salt to taste.
  6. Serve the curry hot, garnished with chopped peanuts, and accompanied by steamed rice or flatbread.
