Spinach and Peanut Stew (Saka-Saka)

Ingredients

  • 2 lbs fresh spinach, washed and chopped
  • 1 cup peanut butter
  • 1 onion, finely chopped
  • 3 tomatoes, chopped
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the chopped onion until translucent.
  2. Add the chopped tomatoes and cook until they are soft.
  3. Stir in the peanut butter and vegetable broth, and bring to a simmer.
  4. Add the chopped spinach to the pot and cook until wilted.
  5. Season with salt and pepper to taste.
  6. Serve the Saka-Saka hot with rice or fufu.
