Saka-Saka is a traditional Central African dish made with spinach and peanuts. It's a hearty and flavorful stew that is perfect for a comforting meal.
Ingredients
- 2 lbs fresh spinach, washed and chopped
- 1 cup peanut butter
- 1 onion, finely chopped
- 3 tomatoes, chopped
- 2 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, sauté the chopped onion until translucent.
- Add the chopped tomatoes and cook until they are soft.
- Stir in the peanut butter and vegetable broth, and bring to a simmer.
- Add the chopped spinach to the pot and cook until wilted.
- Season with salt and pepper to taste.
- Serve the Saka-Saka hot with rice or fufu.
