Spinach and Peanut Stew (Saka Saka na Mafé)

Ingredients

  • 2 cups chopped spinach
  • 1 cup smooth peanut butter
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • 2 tablespoons oil

Instructions

  1. In a large pot, heat the oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the diced tomatoes, paprika, cayenne pepper, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  3. Stir in the peanut butter until well combined with the tomato mixture.
  4. Pour in the vegetable broth and bring the mixture to a simmer.
  5. Add the chopped spinach to the pot and stir until wilted.
  6. Simmer the stew for 20-25 minutes, stirring occasionally, until the flavors have melded together and the stew has thickened to your desired consistency.
