Ingredients
- 2 cups chopped spinach
- 1 cup smooth peanut butter
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced

- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups vegetable broth
- 2 tablespoons oil
Instructions
- In a large pot, heat the oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the diced tomatoes, paprika, cayenne pepper, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Stir in the peanut butter until well combined with the tomato mixture.

- Add the chopped spinach to the pot and stir until wilted.
- Simmer the stew for 20-25 minutes, stirring occasionally, until the flavors have melded together and the stew has thickened to your desired consistency.
