Spinach and Peanut Stew (Tiga Dégué aux Épinards)

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup creamy peanut butter
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cups vegetable broth
  • 1/2 cup crushed peanuts
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the chopped onion until translucent.
  2. Add the diced tomatoes and cook until they soften.
  3. Stir in the peanut butter and vegetable broth, then bring the mixture to a simmer.
  4. Add the chopped spinach and cook for 15-20 minutes, or until the spinach is tender.
  5. Season the stew with salt and pepper to taste.
