Ingredients
- 2 cups fresh spinach, chopped
- 1 cup creamy peanut butter
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cups vegetable broth
- 1/2 cup crushed peanuts
- Salt and pepper to taste
Instructions
- In a large pot, sauté the chopped onion until translucent.
- Add the diced tomatoes and cook until they soften.
- Stir in the peanut butter and vegetable broth, then bring the mixture to a simmer.
- Add the chopped spinach and cook for 15-20 minutes, or until the spinach is tender.
- Season the stew with salt and pepper to taste.
- Serve the Tiga Dégué aux Épinards hot, garnished with crushed peanuts.
