Spinach Curry (sindhi Saag)

Ingredients

  • 1 lb fresh spinach, washed and chopped
  • 2 tomatoes, finely chopped
  • 1 onion, finely chopped
  • 3-4 green chilies, chopped
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste
  • Water as needed

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add chopped onions and green chilies. Sauté until onions are golden brown.
  3. Add chopped tomatoes and cook until they turn soft.
  4. Add turmeric, coriander powder, red chili powder, and salt. Mix well.
  5. Add chopped spinach and cook until it wilts down.
  6. Add garam masala and cook for a few more minutes.
  7. If needed, add a little water to adjust the consistency of the curry.
  8. Spinach curry is ready to be served.
