Spinach Curry (sindhi Saag)

Ingredients
- 1 lb fresh spinach, washed and chopped
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 3-4 green chilies, chopped
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 2 tbsp oil
- Salt to taste
- Water as needed
Instructions
- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add chopped onions and green chilies. Sauté until onions are golden brown.
- Add chopped tomatoes and cook until they turn soft.
- Add turmeric, coriander powder, red chili powder, and salt. Mix well.
- Add chopped spinach and cook until it wilts down.
- Add garam masala and cook for a few more minutes.
- If needed, add a little water to adjust the consistency of the curry.
- Spinach curry is ready to be served.
