Ingredients

  • 1 package (10 ounces) frozen chopped spinach, thawed and drained
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 pre-made pie crust
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, basil, garlic, salt, black pepper, and red pepper flakes.
  3. Press the pie crust into a 9-inch pie dish.
  4. Spoon the spinach mixture into the pie crust and spread it out evenly.
  5. Place the second pie crust on top and crimp the edges to seal the pie.
  6. Brush the top of the pie with the beaten egg.
  7. Make a few small slits in the top crust to allow steam to escape.
  8. Bake for 40-45 minutes, or until the crust is golden brown.
  9. Let the pie cool for 10 minutes before slicing and serving.
