Spinach Potato Curry (sindhi Saag Aloo)

Ingredients
- 2 large potatoes, peeled and cubed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- 4 cups fresh spinach, chopped
- 1 tomato, chopped
- 1 cup water
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
- Add garlic, ginger, and green chili. Sauté for a minute.
- Add all the dry spices and cook for a minute.
- Add potatoes and cook for 5 minutes.
- Add chopped tomatoes and cook until they soften.
- Add chopped spinach and water. Cover and cook until the potatoes are tender.
- Sprinkle garam masala and cook for another 2 minutes.
- Spinach Potato Curry is ready to be served.
