Spinach Potato Curry (sindhi Saag Aloo)

Ingredients

  • 2 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 green chili, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • 4 cups fresh spinach, chopped
  • 1 tomato, chopped
  • 1 cup water

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
  2. Add garlic, ginger, and green chili. Sauté for a minute.
  3. Add all the dry spices and cook for a minute.
  4. Add potatoes and cook for 5 minutes.
  5. Add chopped tomatoes and cook until they soften.
  6. Add chopped spinach and water. Cover and cook until the potatoes are tender.
  7. Sprinkle garam masala and cook for another 2 minutes.
  8. Spinach Potato Curry is ready to be served.
