Spinach Tart (tarta De Espinacas)
Spinach Tart, or Tarta de Espinacas, is a classic dish in Uruguayan cuisine. This savory tart is filled with a creamy spinach mixture and encased in a flaky pastry crust, making it a perfect option for a light lunch or dinner.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3 tablespoons ice water
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 10 ounces fresh spinach, chopped
- 1/2 cup heavy cream
- 3 eggs
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- In a food processor, combine the flour and salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
- While pulsing, gradually add the ice water until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the chopped spinach to the skillet and cook until wilted. Remove from heat and let it cool slightly.
- In a bowl, whisk together the heavy cream, eggs, and mozzarella cheese. Season with salt and pepper.
- Roll out the chilled dough on a floured surface and transfer it to a tart pan. Trim any excess dough.
- Spoon the spinach mixture into the tart shell, then pour the egg and cheese mixture over the top.
- Bake for 35-40 minutes, or until the tart is set and the crust is golden brown.
- Let the tart cool for a few minutes before slicing and serving.
