Ingredients

  • 500g Sardinian fregola pasta
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 400g cherry tomatoes, halved
  • 200g fresh fava beans, shelled
  • 100g pecorino cheese, grated
  • 1/4 cup fresh basil, chopped
  • 4 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot of boiling salted water, cook the fregola pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Add the cherry tomatoes and fava beans to the skillet, and cook for 5-7 minutes until the tomatoes start to soften and release their juices.
  4. Add the cooked fregola pasta to the skillet and toss to combine with the vegetables. Cook for an additional 2-3 minutes to allow the flavors to meld.
  5. Remove the skillet from the heat and stir in the grated pecorino cheese and fresh basil. Season with salt and pepper to taste.
  6. Divide the Splendore Sardo among serving plates and garnish with additional basil leaves. Serve hot and enjoy!
