Ingredients
- 500g Sardinian fregola pasta
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 400g cherry tomatoes, halved
- 200g fresh fava beans, shelled
- 100g pecorino cheese, grated
- 1/4 cup fresh basil, chopped
- 4 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a large pot of boiling salted water, cook the fregola pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the cherry tomatoes and fava beans to the skillet, and cook for 5-7 minutes until the tomatoes start to soften and release their juices.
- Add the cooked fregola pasta to the skillet and toss to combine with the vegetables. Cook for an additional 2-3 minutes to allow the flavors to meld.
- Remove the skillet from the heat and stir in the grated pecorino cheese and fresh basil. Season with salt and pepper to taste.
- Divide the Splendore Sardo among serving plates and garnish with additional basil leaves. Serve hot and enjoy!
