Split Pea Soup

Ingredients

  • 1 pound dried split peas
  • 1 ham hock or ham bone
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas and set aside.
  2. In a large pot, sauté the onion, carrots, celery, and garlic until softened.
  3. Add the split peas, ham hock or bone, and broth to the pot.
  4. Bring the soup to a boil, then reduce the heat and simmer for 1 hour, or until the peas are tender.
  5. Remove the ham hock or bone, shred the meat, and return it to the soup.
  6. Season with salt and pepper to taste.
