Ingredients
- 1 pound dried split peas
- 1 ham hock or ham bone
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 6 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- Rinse the split peas and set aside.
- In a large pot, sauté the onion, carrots, celery, and garlic until softened.
- Add the split peas, ham hock or bone, and broth to the pot.
- Bring the soup to a boil, then reduce the heat and simmer for 1 hour, or until the peas are tender.
- Remove the ham hock or bone, shred the meat, and return it to the soup.
- Season with salt and pepper to taste.
