Sponge Cake (coca De Llanda)
Sponge Cake, also known as Coca de Llanda, is a traditional dessert from Valencian cuisine. This light and fluffy cake is perfect for enjoying with a cup of coffee or tea.
Ingredients
- 4 eggs
- 1 cup sugar
- 1 cup all-purpose flour
- 1/4 cup milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a rectangular baking pan.
- In a large bowl, beat the eggs and sugar together until light and fluffy.
- Sift the flour, baking powder, and salt into the egg mixture. Gently fold in the dry ingredients until just combined.
- Stir in the milk and vanilla extract until the batter is smooth.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake for 25-30 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve the sponge cake as desired.
