Ingredients

  • 4 cups yellow squash, sliced
  • 1/2 cup onion, chopped
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup butter, melted
  • 1/2 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the sliced squash and chopped onion in a pot with enough water to cover them. Bring to a boil and cook for 5 minutes, then drain well.
  3. In a large bowl, mix together the cooked squash and onion, cheddar cheese, sour cream, melted butter, salt, and black pepper.
  4. Transfer the mixture to a greased casserole dish.
  5. Sprinkle the breadcrumbs over the top of the squash mixture.
  6. Bake in the preheated oven for 35-40 minutes, or until the casserole is golden and bubbly.
  7. Let it cool for a few minutes before serving.
