Squash Casserole

Ingredients
- 4 cups yellow squash, sliced
- 1/2 cup onion, chopped
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 1/4 cup butter, melted
- 1/2 cup breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- Place the sliced squash and chopped onion in a pot with enough water to cover them. Bring to a boil and cook for 5 minutes, then drain well.
- In a large bowl, mix together the cooked squash and onion, cheddar cheese, sour cream, melted butter, salt, and black pepper.
- Transfer the mixture to a greased casserole dish.
- Sprinkle the breadcrumbs over the top of the squash mixture.
- Bake in the preheated oven for 35-40 minutes, or until the casserole is golden and bubbly.
- Let it cool for a few minutes before serving.
