Ingredients
- 1 kg fresh squid, cleaned and cut into rings
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 2 cups tomato puree
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Sprinkle the paprika and cayenne pepper over the onion and garlic, and stir to combine.
- Add the tomato puree to the skillet and stir well. Let the sauce simmer for 10 minutes.
- Add the cleaned squid rings to the tomato sauce and simmer for an additional 15-20 minutes, or until the squid is tender.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
