Ingredients

  • 1 kg fresh squid, cleaned and cut into rings
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 2 cups tomato puree
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Sprinkle the paprika and cayenne pepper over the onion and garlic, and stir to combine.
  4. Add the tomato puree to the skillet and stir well. Let the sauce simmer for 10 minutes.
  5. Add the cleaned squid rings to the tomato sauce and simmer for an additional 15-20 minutes, or until the squid is tender.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.
