Squid Mahshi (aleppo-style Stuffed Squid)
Squid Mahshi is a traditional Syrian dish that features tender squid stuffed with a flavorful mixture of rice, herbs, and spices. This Aleppo-style recipe brings together the rich flavors of the region, creating a dish that is both comforting and satisfying.
Ingredients
- 4 medium-sized squid, cleaned and tentacles reserved
- 1 cup long-grain rice, rinsed
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 garlic cloves, minced
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1 teaspoon allspice
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups chicken or vegetable broth
Instructions
- In a large bowl, combine the rice, onion, tomatoes, garlic, parsley, mint, allspice, cumin, cinnamon, salt, and pepper. Mix well to combine.
- Stuff the squid with the rice mixture, leaving some room for the rice to expand during cooking. Secure the openings with toothpicks.
- Heat the olive oil in a large pot over medium heat. Add the stuffed squid and tentacles, and cook until lightly browned on all sides.
- Pour the broth over the squid, cover the pot, and simmer for 30-35 minutes, or until the squid is tender and the rice is cooked.
- Remove the toothpicks and transfer the squid to a serving platter. Spoon the cooking liquid over the squid before serving.
