Squid Mahshi (stuffed Squid With Rice And Herbs)

Ingredients

  • 4 medium-sized squid, cleaned
  • 1 cup basmati rice, rinsed
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups fish or vegetable broth

Instructions

  1. In a bowl, combine the rice, onion, tomatoes, parsley, cilantro, cumin, coriander, turmeric, cinnamon, salt, and pepper. Mix well.
  2. Stuff the squid with the rice mixture, leaving some space for the rice to expand while cooking.
  3. Secure the opening of the squid with toothpicks to prevent the filling from falling out.
  4. In a large pot, heat the olive oil over medium heat. Add the stuffed squid and sear for 2-3 minutes on each side.
  5. Pour the broth over the squid, cover the pot, and simmer for 30-35 minutes, or until the squid and rice are fully cooked.
  6. Remove the toothpicks from the squid before serving.
