Ingredients
- 1 lb squid, cleaned and sliced into rings
- 2 cups long-grain white rice
- 1 onion, finely chopped
- 1 bell pepper, diced
- 3 garlic cloves, minced
- 1 can (8 oz) tomato sauce
- 2 cups chicken or seafood broth
- 1/4 cup chopped cilantro
- 1/4 cup pimento-stuffed olives
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic. Cook until the vegetables are softened.
- Add the squid to the pot and cook for 2-3 minutes until it turns opaque.
- Stir in the rice, tomato sauce, broth, paprika, salt, and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, stir in the cilantro and olives. Adjust seasoning if necessary.
- Serve the squid rice hot, garnished with additional cilantro if desired.
