Ingredients

  • 4 large bell peppers
  • 1 pound ground beef

  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups beef or vegetable broth

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the ground beef, rice, onion, garlic, diced tomatoes, paprika, salt, and pepper.
  4. Stuff the bell peppers with the meat mixture and place them in a deep pot.
  5. Pour the broth over the stuffed peppers and bring to a boil.
  6. Reduce the heat, cover, and simmer for 45-50 minutes, or until the peppers are tender.
