Ingredients
- 4 large bell peppers
- 1 pound ground beef
- 1/2 cup uncooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups beef or vegetable broth
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the ground beef, rice, onion, garlic, diced tomatoes, paprika, salt, and pepper.
- Stuff the bell peppers with the meat mixture and place them in a deep pot.
- Pour the broth over the stuffed peppers and bring to a boil.
- Reduce the heat, cover, and simmer for 45-50 minutes, or until the peppers are tender.
- Serve the stuffed peppers with the cooking liquid as a sauce.
