Ingredients

  • 2 cups cornmeal
  • 1 cup all-purpose flour
  • 1 1/2 cups plain yogurt
  • 1/2 cup vegetable oil
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 eggs

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, mix together the cornmeal, flour, baking powder, and salt.
  3. In another bowl, whisk together the yogurt, oil, and eggs.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Stir in the crumbled feta cheese and chopped parsley.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Let the proja cool for a few minutes before slicing and serving.
