Srpski Ratatuj (serbian-style Ratatouille)

Ingredients
- 2 eggplants, diced
- 3 zucchinis, diced
- 2 red bell peppers, diced
- 1 onion, chopped
- 4 garlic cloves, minced
- 4 tomatoes, diced
- 1/4 cup olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and sauté until softened.
- Add the eggplants, zucchinis, and bell peppers. Cook for 10 minutes, stirring occasionally.
- Add the tomatoes, thyme, oregano, salt, and pepper. Stir well to combine.
- Cover the pot and simmer for 30 minutes, or until the vegetables are tender.
- Adjust seasoning if needed, then serve hot.
