Ingredients

  • 2 eggplants, diced
  • 3 zucchinis, diced
  • 2 red bell peppers, diced

  • 4 tomatoes, diced
  • 1/4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Add the eggplants, zucchinis, and bell peppers. Cook for 10 minutes, stirring occasionally.
  4. Add the tomatoes, thyme, oregano, salt, and pepper. Stir well to combine.
  5. Cover the pot and simmer for 30 minutes, or until the vegetables are tender.
  6. Adjust seasoning if needed, then serve hot.
