Ingredients
- 1 lb beef sirloin, thinly sliced
- 2 tbsp olive oil

- 8 oz mushrooms, sliced
- 1 cup beef broth
- 1 cup sour cream

- 2 tbsp chopped fresh parsley
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef and cook until browned. Remove the beef from the skillet and set aside.
- Heat the remaining olive oil in the same skillet. Add the onion and garlic, and cook until softened.
- Add the mushrooms to the skillet and cook until they release their liquid and become golden brown.
- Pour in the beef broth and bring to a simmer. Stir in the sour cream and return the beef to the skillet. Cook until the sauce thickens slightly.
- Season with salt and pepper, and sprinkle with chopped parsley before serving.
