Ingredients
- 1.5 lbs stewing beef, diced
- 2 onions, sliced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 cup ale
- 1 cup beef stock
- 2 tbsp tomato paste
- 2 sprigs fresh thyme
- Salt and pepper to taste
- 2 sheets puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, brown the diced beef in batches. Remove and set aside.
- Add the onions, carrots, and celery to the pot and cook until softened.
- Stir in the garlic and flour, then pour in the ale and beef stock.
- Add the browned beef back to the pot, along with the tomato paste and thyme. Season with salt and pepper.
- Cover and simmer for 1.5 hours, or until the beef is tender.
- Transfer the beef mixture to a pie dish and cover with puff pastry. Brush the pastry with the beaten egg.
- Bake for 25-30 minutes, or until the pastry is golden and puffed.
