Ingredients

  • 1.5 lbs stewing beef, diced
  • 2 onions, sliced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup ale
  • 1 cup beef stock
  • 2 tbsp tomato paste
  • 2 sprigs fresh thyme
  • Salt and pepper to taste
  • 2 sheets puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, brown the diced beef in batches. Remove and set aside.
  3. Add the onions, carrots, and celery to the pot and cook until softened.
  4. Stir in the garlic and flour, then pour in the ale and beef stock.
  5. Add the browned beef back to the pot, along with the tomato paste and thyme. Season with salt and pepper.
  6. Cover and simmer for 1.5 hours, or until the beef is tender.
  7. Transfer the beef mixture to a pie dish and cover with puff pastry. Brush the pastry with the beaten egg.
  8. Bake for 25-30 minutes, or until the pastry is golden and puffed.
  9. Serve hot and enjoy!
